With its cool evenings and warm days, Lodi is known as a producer of fragrant, concentrated, and silky textured fruit. We selected the majority of the grapes for Apothic Pinot Noir from the unique Lodi-Delta region in California. It’s a perfect pairing for an interesting night in with friends or perhaps to savor alongside a date night dinner. Long and lingering on the finish, this is a bright red wine with endless possibilities. Apothic Pinot Noir offers notes of ripe raspberry and black cherry, with a touch of caramel and vanilla from the oak. Viticulture Notes:We selected the majority of the grapes for Apothic Cab from Lodi in California’s Delta region. Subtle suggestions of vanilla linger on the smooth finish, a reflection of the wine’s selective oak aging. A small addition of Zinfandel to the wine adds layers of cherry and dark fruit notes as well as a hint of spice. This wine showcases Cabernet Sauvignon’s distinctive fruit characteristics of blueberry, blackberry jam and dark plum, supported by soft, fine tannins that add plush richness to the mouthfeel. Our 2021 Apothic Cab captures the best of Cabernet Sauvignon, bringing a silky, elegant and delicate dimension to the typically bold characteristics of the variety. Across all lots, we exercised meticulous temperature control to maximize the extraction of color and dark fruit notes. We fermented the wine for five to seven days in a combination of cone-sweep and upright tanks at a temperature averaging 85-88☏. Grapes for 2021 Apothic Red were de-stemmed, with a portion selected for whole-cluster fermentation. The 2021 Apothic Red is a rich Zinfandel-led Red blend with red silky, smooth layers of black cherry, boysenberry and black pepper.
